Tortillas are technically a Hispanic food but they can be used for far more than taco meat and refried beans. Here are 5 great lunch ideas . . . all made with tortillas!
Tortilla Pizza Quesadilla - Use a greased frying pan on medium heat to begin warming your first tortilla. Add pizza sauce, mozzarella cheese, pepperoni and anything else you like on your pizza. Top with another tortilla and flip it. Let the other tortilla get golden and then remove from pan. Cut and eat. Delicious!
Greek Tortilla Wrap - This is one of my favorites! Lay a cold or room temperature tortilla on a plate. Add deli meat, fresh spinach, feta cheese and top with some vinegarette dressing. Roll it up like a burrito. YUMMERS!
Classic Quesadilla - Use a greased frying pan on medium heat to begin cooking tortilla #1. Add cheddar cheese, jalapenos, taco meat, veggies or whatever you like. Top with another tortilla. Flip when bottom tortilla is golden. Let side two become golden and remove from heat. Top with sour cream, taco sauce, salsa, refried beans and/or whatever strikes your fancy. Enjoy!
Cream Cheese Turkey Wrap - This is my husbands favorite. Use a cold or room temperature tortilla and lay it flat on a plate. Spread a thin layer of cream cheese over the entire circumference of the tortilla. Add deli meat, shredded cheddar and some chopped iceberg lettuce. Roll it up. You can heat this for a few seconds in the microwave or it tastes great cold! Delish!
Homemade Tortilla Chips - This is simple and yummy. Cut several tortillas into small t riangles. Lay trianbles in a single layer on a cookie sheet. Spray triangles with a little Pam. Sprinkle salt and another spice of your choosing (I like a little curry) onto the tortilla triangles. Bake at 375 until golden brown. Eat them plain or dip them in hummus, salsa or melted cheese. Magnifique!
