I’m not a fan of plain peanut butter cookies. But add some chocolate frosting and that changes everything!!! Delicious!!!
Peanut Butter Cookies
- 1-1/4 cups all-purpose flour
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup butter or margarine
- ½ cup peanut butter
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 egg
- ½ teaspoon vanilla
Mix together flour, soda, and salt. In a mixer bowl beat butter for 30 seconds. Add peanut butter and sugars; beat till fluffy. Add egg and vanilla; beat well. Add dry ingredients
to beaten mixture; beat till well combined. Shape dough into 1-inch balls; roll in granulated sugar, if desired. Place 2 inches apart on an ungreased cookie sheet; crisscross with the tines of a fork. Bake at 375 for 10 minutes (I usually do 8 minutes). Cool about 1 minute before removing to a wire rack. Makes 48.
Chocolate Frosting
In a mixing bowl, mix 3 tbsp. melted butter, 3 tbsp. cocoa powder, 2 tbsp. milk and ½ tsp.
vanilla. Add 2 cups powdered sugar and beat with an electric mixer till the frosting is spreadable. Depending on how much frosting you put on your cookies, you might need to double this to frost the whole batch.
