Looking for a really delicious bar recipe? Try this one. The oatmeal cookie type crust topped with the creamy chocolate filling is SO good!
Crust:
- 1 c. butter or margarine, softened
- 2 cups packed brown sugar
- 2 eggs
- 2 tsp. vanilla extract
- 3 cups quick-cooking oats
- 2-1/2 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
In a mixing bowl, cream butter and brown sugar. Beat in eggs and vanilla. Combine the oats, flour, salt and baking soda; stir into creamed mixture. Press two-thirds of oat mixture into a greased 14x10x1 baking pan.
Filling:
- 2 Tbsp. butter or margarine, softened
- 2 tsp. vanilla extract
- ½ tsp. salt
- 1 can (14 oz.) sweetened condensed milk
- 2 cups (12 ounces) semisweet chocolate chips
In a saucepan, combine milk, chocolate chips, butter and salt. Cook and stir over low heat until chocolate is melted. Remove from the heat; stir in vanilla. Spread over the crust. Sprinkle with remaining oat mixture.
Bake at 350 for 20 to 25 minutes or until golden brown. Cool. Cut into squares. Yield: 4 dozen.

Patty,
Is there supposed to be chocolate chips and condensed milk in both the crust and the filling, or was that a typo?
Shelley
Typo. I fixed it. Thank you so much for pointing that out. The recipe originally had several ingredients combined and I split them out to make it easier but I missed those two items. Now it is correct.
I love to bake and oatmeal cookies have always been my favorite cookie!!!! I am excited to try out some oatmeal mix cookies this fall:) LET THE BAKING BEGIN!!!!!!! First is oatmeal/apple chunk.
Well, if you like oatmeal, you will LOVE the chocolate oat squares. They are awesome.
Thank you so much for this post, I’d just like to say that I love to bake!! Sometimes it is not the best result but others it is great. I just happened to make pumpkin chocolate chip cookies tonight. They were so easy too! 1 box quick pumpkin bread…1 can REAL PUMPKIN( not pie filling) and 1 bag of semi sweet chocolate chips! bake at 375 for about 12 mins.. YUMMY and great for Halloween:)
