Cinnamon-Topped Oatmeal Muffins

I make these muffins a lot because I can throw them together quickly and they taste great.  They’re good with dinner, breakfast or for a snack.

Stir together in mixing bowl:

  • 1 cup flour
  • ¼ cup sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt

Stir in:

  • 1 cup quick or old-fashioned oats

Add:

  • 3 tablespoons oil
  • 1 egg, beaten
  • 1 cup milk

Stir only until dry ingredients are moistened.  Fill greased muffin cups full.  Sprinkle with cinnamon topping:

  • 2 tablespoons sugar
  • 2 teaspoons flour
  • 1 teaspoon cinnamon
  • 1 teaspoon melted butter

Bake 10 minutes at 400.  Yield:  12 muffins
