My husband, David, loves sweet potatoes so I’m always looking for different ways to make them. I found this recipe for sweet potato fries and it’s now my go-to recipe. He loves it and it’s easy to make.
- Sweet Potatoes (one per person)
- 1 or 2 tablespoons corn starch
- 2 tablespoons olive oil
- salt, pepper & other spices of your choice
Preheat the oven to 425 degrees Fahrenheit. Peel the sweet potatoes (1) and cut them into fry-shaped pieces. Try to cut them into similar sized pieces so the fries will bake evenly.
Toss the uncooked fries into a mixing bowl or plastic bag. Sprinkle fries with cornstarch and pour in a few tablespoons of olive oil, enough to lightly coat the fries. Season with salt, pepper and spices (for the spices, about ½ teaspoon per potato).(2) Mix/shake to distribute evenly.
Pour the fries directly onto a dark, non-stick baking sheet.(3) Arrange fries in a single layer and don’t overcrowd.
Bake 15 minutes, then flip so they can cook on all sides.
Bake 10 to 15 more minutes or until the fries are crispy. Don’t worry if the edges are a little bit brown – they taste caramelized rather than burned.
(1) I don’t peel them.
(2) I use paprika.
(3) I spray the sheet with Pam.
