This recipe is really special to me. My Aunt Doll used to make these cookies. After I got married, I called her to get the recipe so I could make them, too.
They’re sort of like a sugar cookie but not quite as sweet. Sometimes I leave the cherry off some of the cookies for the cherry haters in my house.
Mix together:
- 1 cup flour
- ¼ cup sugar
- 4 tablespoons butter or margarine
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 4 tablespoons shortening
- 1 egg
- 1 small jar maraschino cherries
Mix all ingredients together except egg. When thoroughly mixed, add egg (dough will be soft). Roll out pretty thin. Cut with cookie cutter. Prick with fork. Bake at 400 degrees for about 8 to 10 minutes (watch closely). Edges will be light brown.
Frost with powdered sugar icing (1 cup powdered sugar, ½ teaspoon vanilla, 1 tbsp. or so milk until correct consistency – not so thin it runs off the cookie but not as thick as frosting although sometimes I do just use vanilla frosting to save time) and put a halved maraschino cherry in the center of each (I love cherries so I put more than just one).
NOTE: If you roll these on a heavily floured pastry cloth, they are much easier to work with since it’s such a soft dough.
