My husband is a big fan of fruit desserts and he really liked this one.  Don’t be confused by the photo – it looks like a cobbler but it’s really a bar.  I dumped it in the bowl without paying attention and realized later I should have been more careful with my presentation.  But you get the idea.

Batter Ingredients:

  • 1 cup unsalted butter, softened (1)
  • 2 cups granulated sugar
  • 4 eggs
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon ground nutmeg (2)
  • ¼ teaspoon ground ginger (2)
  • 1 (21-ounce) can Peach Pie filling (3)

Glaze Ingredients: (4)

  • 1 cup powdered sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons milk

Directions:

Preheat oven to 350 degrees.

Beat butter and sugar in a large mixing bowl until creamy.  Add eggs one at a time, beating after each.  Add flour, salt, cinnamon, baking powder, nutmeg and ginger.

Spread three-quarters of batter into a greased 13×9-inch pan. (5)  Bake uncovered for 30-40 minutes.  Allow to cool for 10 minutes.

For optional glaze, whisk powdered sugar, cinnamon and milk to desired consistency.  Drizzle over warm bars.

Notes:

(1)     I didn’t have unsalted butter so I used margarine instead.

(2)     I don’t like nutmeg or ginger so I left both of them out.

(3)     Since it was just the two of us, I cut the recipe in half.  But I went ahead and used the whole can of pie filling.

(4)     I skipped the glaze.

(5)     Since I only made a half batch, I used an 8×8 pan but cooked it the same amount of time.
