Parmesan Potato Wedges (or Chips)

This is another recipe I’ve been making a long time.  Sometimes I make the potatoes in wedges and sometimes in “chips”.  The spicy topping is really delicious and the potatoes go with a lot of different dishes.  They also make a great snack.

Ingredients:

  • 4 large baking potatoes (I use two 7 oz. potatoes for chips)
  • ¼ cup grated parmesan cheese (the stuff in the can – it stays on the potatoes better)
  • 1 teaspoon garlic salt
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika

For Wedges:

Combine all ingredients in a small bowl.  Line a baking sheet with foil and spray with pam.  Cut each potato into 8 wedges; place on foil.  Spray potatoes with pam.  Sprinkle with seasonings.  Bake at 400 for 30 minutes.

For Chips:

Combine all ingredients in a small bowl.  Line a baking sheet with foil and spray with pam.  Slice potatoes into thin slices; place on foil.  Spray potatoes with pam.  Sprinkle with seasonings.  Bake at 400 for about 20 minutes.
