This is a great recipe for when you’re short on time but need to get a good, filling dinner on the table. The soup uses a shortcut – lasagna dinner mix.
This recipe is also very versatile so if you want to add something or omit something (like the zucchini), you can very easily. And it can be even faster and easier if you precook a pound of ground beef and onions and have it waiting in the freezer.
- 1 pound ground beef
- ½ cup chopped onion
- 1 pkg. (7-3/4 oz) lasagna dinner mix
- 5 cups water
- 1 can (14-1/2 oz) diced tomatoes, undrained
- 1 can (7 oz) whole kernel corn, undrained
- 2 tablespoons grated Parmesan cheese
- 1 small zucchini, chopped
In a Dutch oven, cook beef & onion over med heat until meat is no longer pink; drain. Add contents of lasagna mix, water, tomatoes, corn and Parmesan cheese; bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally. Add the lasagna noodles and zucchini. Cover and simmer for 10 minutes or until noodles are tender.
Serve immediately.
