Roasted Cauliflower

I’m not a big fan of cauliflower.  It’s not that I don’t like it – I just don’t love it.  It doesn’t have very much taste.  That being said, I LOVE this recipe!  This is one way I will eat cauliflower and love it!

  • 2 tablespoons minced garlic (I will use only 1 tablespoon next time)
  • 3 tablespoons olive oil
  • 1 large head cauliflower, separated into florets
  • 1/3 cup parmesan cheese
  • salt & black pepper, to taste
  • 1 tablespoon chopped fresh parsley

Preheat the oven to 450 degrees.  Grease a large casserole dish.

Place the olive oil and garlic in a large zip lock bag.  Add cauliflower and shake to mix.  Pour into the prepared casserole dish and season with salt and pepper to taste.

Bake for 25 minutes, stirring halfway through.  Top with parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown (I didn’t broil – just baked a little longer).

  1. Well I wish I’d have found this before I threw a whole head of it in the compost pile last week! Someone asked me to buy it and then no one would eat it.
