Roasted Chick Peas

I LOVE these roasted chickpeas! They are so good and extremely easy to make.  You can use them as a snack, an appetizer, or toss them in your salad.  If you’re adventurous (which I’m not), you could easily try different spice combinations for different flavors.  But as for me, I’ll just follow the recipe.

Toss together:

  • 1 can (15 oz.) chickpeas (also known as garbanzo beans), rinsed and drained
  • 2 teaspoons olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon ground pepper

Bake at 400 degrees in a single layer on a greased baking sheet until golden, about 35 minutes.  Don’t undercook or they won’t be crunchy.  If you take them out of the oven and discover they’re not quite crunchy enough, you can put them back for a few minutes.
