Sautéed Asparagus and Peppers

I don’t have a lot of good side dish recipes.  I tend to use the same old salad or steamed frozen vegetables.  But I’m trying to find more.  I just don’t want them to be too time consuming because I’d rather spend my time on the main dish.  I served this dish with the Slow-Cooker Beef Stroganoff and it was a definite keeper.  And it was about as easy as it could be.  It would make a great side dish for nearly any meal.


  • 1 tablespoon olive oil
  • 1 pound asparagus, trimmed
  • 1 red bell pepper, cut into 2-inch pieces
  • 1 teaspoon bottled minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper


In a large skillet, heat olive oil over medium-high heat.  Add asparagus and bell pepper.  Cook, stirring frequently, for 5 minutes.  Add garlic; cook, stirring frequently, for 2 more minutes.  Sprinkle with salt and pepper.
