Slow Cooker Beef Stroganoff

I really wanted to title this ‘Slap Ya Momma Stroganoff’ but my momma reads this blog. So I had to be nice. As you can see from the picture the recipe calls for mushrooms.

Now I don’t mind telling you that the mushrooms are what killed any desire for the creamy goodness of this recipe in my 10 year old mind. However if you are a mushroom lover or don’t have the childish aversion that I have of all the mushroomy goodness you will love this recipe!

You’re in for a treat with this simple, comforting beef stroganoff recipe.  It’s easy and delicious!

Beef Stroganoff Ingredients:

  • 2 pounds beef or venison roast or stew meat
  • 2 cups (about 6 ounces) sliced mushrooms
  • 1 cup beef broth
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons minced garlic, or 1 teaspoon garlic powder
  • 2 Tablespoons Worchestershire sauce
  • 1-1/2 cups sour cream or plain Greek yogurt
  • hot cooked noodles

Beef Stroganoff Directions:

In a 4- to 6-quart slow cooker, combine meat, mushrooms, broth, onion, and spices.  Cover and cook on low 8-10 hours or on high 5-6 hours, until beef is tender. About 10-15 minutes before you’re ready to eat, shred meat with two forks (if using a roast), stir in sour cream, and heat through while cooking the noodles according to package directions.  Serve beef mixture over noodles.
