
This is a new recipe for us. It was very easy to put together and tasted great. I would definitely serve it with the extras listed below.
- 1 fryer chicken, cooked and cubed (I used four chicken breasts, cooked and shredded)
- 10-3/4 ounce can cream of chicken soup
- 14-1/2 oz. can tomatoes with chilies, drained
- 6 (6-inch) tortillas, torn in half (I tore them into strips and used bigger tortillas since that was all I had)
- 1 medium onion, chopped
- 2 cups grated cheddar cheese (I used whatever looked good – probably more)
1. Combine chicken, soup and tomatoes with chilies. Spray slow cooker with cooking spray.
2. Layer as follows:
- 1/3 tortilla pieces
- 1/3 chicken mixture
- 1/3 onion
- 1/3 cheese
Repeat layers TWO more times.
3. Cover and cook on low 4 to 6 hours. Let stand before serving. Serve with shredded lettuce, chopped fresh tomatoes, diced raw green onions, sour cream and salsa.

How cooked does the onion get in this? I can’t have raw or undercooked onion…
It’s fully cooked. When I had the soup, I didn’t notice any crunchy onion or prominent onion flavor. I wouldn’t worry about it but if you were concerned, you could use minced onion (the stuff you buy in the spice section at the grocery store) or saute the onion in a skillet and then throw it in the crock pot. But I really don’t think the onion will be undercooked.
Does it matter if you use flour or corn tortillas for this recipe? I would think the flour kind would get soggy or mushy.
I used flour and they worked out well. I would think corn would be okay, too.

I’m gonna try this one this week. I just baked off some bone in chicken breasts I got on sale at HyVee for $.88/# last night. I didn’t know what I would do with them yet but I have everything to make these. I love recipes that are only 4-6 hours cause I get home from work at 2:30, and we usually eat around 6:30-7.
