
Here’s this week’s menu. I’m trying several new recipes which I hope I’ll be able to share with you soon. I’m especially anxious to make the Pretzel-crusted chicken. It looks and sounds delicious!

NOTE: I made the meat loaf and the potato casserole earlier in the day and put them in the refrigerator until baking time. I also made the Cheddar and Herb Biscuit batter earlier but I didn’t actually cook them until right before serving time. All that preparation made dinner time must easier!

Shredded BBQ Chicken Sandwiches, Fries & Green Beans
NOTE: I always cook the chicken ahead of time, shred it in my Kitchen-Aid or with my
hand mixer (Hate Shredding Chicken? Don’t Have a Kitchen-Aid? This is For You! or Believe It Or Not, You Can Shred Chicken in your Kitchen-Aid!) and then put the chicken and barbecue sauce in my 2.5 quart crock pot. It’s one less thing I have to do at dinner time.
DESSERT: Peanut Butter Brownie Cups
