Here’s this week’s menu. I’m looking forward to trying several new recipes (Lentil Soup, Easy Baked Chicken). A couple of these are new to you but I’ve made them before (Indy Veggie Burgers, Ice Cream Dessert). As soon as I get them made and have pictures to share, I’ll share them with you.
NOTE: This is a great meal to serve to guests. When I make it just for us, I make one pan of cheese enchiladas. But if I have guests, I double the recipe and make two. We don’t mind leftovers (if there are any – this is a real crowd pleaser).
Sweet Potato Fries
NOTE: I made this for my stepfather’s birthday dinner. This is one of my favorite meals to serve to guests. I can do most of it ahead and it always tastes great.
