What’s For Dinner? (No 101)

I’m baaaack!  I’ve actually been cooking the whole time we’ve been working on the kitchen in our fixer upper but my menus were a little unusual given the fact that I didn’t have a stove, oven or sink and was doing most of my cooking in the living room or dining room using crock pots, the rice cooker and the microwave.

The kitchen isn’t done yet but it’s usable.  Yes!!!  So here’s this week’s menu, all back to normal.

1-
Teriyaki Chicken
Green Bean & Mozzarella Salad

NOTE:  I used a Lawry’s marinade for the chicken – just to keep things simple.  Even though the kitchen is usable, sometimes David’s using it and I can’t.  A bottled marinade allowed me to get in and out of the kitchen quickly.

One Pan Chicken & Potatoes
Herbed Flatbread

Best Ever Meat Loaf
Velveeta Macaroni & Cheese
Green Beans
Blueberry Muffins

NOTE:  The muffins were a mix.  I have some very good muffin recipes but I was trying to save time.

Tacos
Pimiento & Chilies Cheese Dip

Sloppy Joes (Manwich)
Oven baked fries (Ore Ida)
Salad

DESSERT:  Peanut Butter Bars
(family favorite & my go-to recipe if I need dessert fast)

  1. I have all the things on hand to make those peanut butter bars and since I’m not getting out in this cold (can you believe the temp?), I think I’ll be sending these in the boys’ lunches tomorrow. I bet you are very happy to have a usable kitchen again!

    • Have you made them before? They are SO good and SO easy! I almost always have all the ingredients on hand – that’s why it’s my go-to. If you don’t have milk chocolate chips, you can use semi. They’re just not quite as sweet.
